Preparation process:

  • Add some water to a bowl and add salt then wash the brinjals well
  • Now lit the stove and place a pan on it then add oil to the pan after the pan gets lightly then add chopped onions and fry them well and now keep these onions into another plate or bowl
  • Then add peanuts, sesame, coconut, coriander powder, elachi, miryalu, to the pan and fry then well now add sajeera and menthi seeds and fry them well and add them into a grinder and also add fried onions to the grinder and add some red chilli powder, turmeric, salt and make it into a smooth paste and keep it a side. 
  • Now place a pan on the stove and add brinjals to the pan and fry them until they turn light brown and keep a side
  • Now add chopped onions, green chillies, curry leaves to the pan and fry them well now add ginger garlic paste and fry them well now add some red chilli powder and turmeric powder and mix well and now add the grinded paste to the pan and mix well then cover the pan with a lid for few minutes
  • Now remove the lid and add tamarind juice to the pan and mix well and cover it with a lid for few minutes
  • Now remove the lid and mix well and now add the fried brinjals to the pan and cover it with a lid for few minutes after few minutes remove the lid and off the stove and that's all yummy tasty beinjal curry is ready
